This salad is delicious and great for summer it is healthy full of happy nutrients, low glycemic and anti aging. Sweet potatoes have B6, Vitamin C,Vitamin D, Iron, and magnesium. INGREDIENTS: 4 quarts water 2 large sweet potatoes 2 TB vinegar 1TB lemon juice 1 bunch green onions 3 stalks celery 1 cucumber 1/2 c fresh cilantro 1/2 cup plain yogurt sea salt and black pepper 1/4 c toasted sunflower seeds peel and cut the sweet potatoes into cubes. In medium saucepan print water to boil add chopped sweet potatoes. Bring water to a boil and reduce heal to low cook for 30 minutes. Transfer to bowl and cool in fridge. Meanwhile chop onions, celery, cucumber and cilantro toss with vinegar and lemon juice. Add the cooled sweet potatoes and yogurt gently toss. Season with salt and pepper and sprinkle with sunflower seeds. |
